Microgreens develop their first true leaves that make contact with light by photosynthesis. However, they still carry the primal energy of the seed as they have not yet fully adapted to the their future as plants of light. In this way, the 'baby leaf' which is the first true leaf after the cotyledons (seed leaves) represents the epiphany of a true plant emerging into the light of the cosmic sun.
